This Cabernet Sauvignon was left to mature to its peak before it was hand harvested and hand sorted. It underwent a cold maceration for 5 days before fermentation. Extended skin contact rounds out the palate and integrates the rich tannins to seamless perfection. Finally, it aged in French oak barrels for 9 months prior to bottling.
The 2016 Cabernet is rich and textured with a depth of complexity. It boasts flavors of ripe plums, black fruits, and espresso, with silky tannins and a balanced structure. Pair with grilled lamb, roasted meats, or Italian food.
