.2012 William Hill Estate Chardonnay North Coast The inaugural vintage of our William Hill Estate North Coast Chardonnay offers aromas and flavors of ripe tree fruit, underscored by hints of brown spice, citrus and tropical fruit. Hailing mostly from Sonoma and Mendocino, with a touch of fruit from Napa, this well-integrated wine has excellent acidity and a creamy mouthfeel. Description Viticulture Notes The 2012 vintage in the North Coast was exceptional. Mild, moderate conditions prevailed throughout the growing season, allowing our vines to develop at a steady pace. The even ripening and ideal conditions produced fruit of extraordinary quality, leading to well-balanced, full-bodied wines with expressive flavors. Winemaking Notes The grapes for our 2012 North Coast Chardonnay were harvested between late August and mid-October, and then gently whole-cluster pressed. After settling overnight, the juice was racked and inoculated with yeast strains D254, CY3079 and EC1118. A portion of this wine was fermented in stainless steel tanks at a maximum temperature of 62°F, with the balance fermented in barrels at an ambient cellar temperature of around 65°F. This wine underwent malolactic fermentation and sur lie aging to impart a creamy mouthfeel.
